I'm sorry I can't help with that question, I don't know a thing about the Granite and what the optimal KV would be in that truck.
I don't see why not, as far as I know the Castle 3800 is a standard 540/550 size ... site says
Length: 52.7mm
Diameter: 36mm
Granite specs say:
Motor: Brush equipped, Mega 12T 550 size
12T is roughly around 3800kv so they should be very close in terms of gearing

Check out this thread, post #7 @Mongoose. With the 5mm pinion bore finding 48p pinions with lower gearing seems to be an issue. I didn't look into the pinions myself so I cannot say for certain if it is a problem or not.

ah good catch, forgot about the 5mm shaft and 48p combo, that is kind of rare to have...

I sure hope so, I have one on order*... But the Mamba X combo, not the Sidewinder SCT combo.
As for the 5mm bore, 48p pinions, they are not as common as 1/8" bore, but they exist. I bought some Robinson Racing ones from Amain. Smallest they have is 17t (from memory). But then, I am running a 32p spur in my Granite 4x4. 48p just can't hold up in that truck.
*Actually, I should say I have one on Back-order. Grrr...
